the Arduino starter kit that i bought from explore labs: http://store.explorelabs.com/index.php? ... cts_id=182
does not have a potentiometer and most projects on the official arduino site require this, What can I use instead that is in this kit?

You must have received a TrimPot - 1K or 10K value.
Check the packing list for this part.

This Trim Pot is also called a Potentiometer.
It can act as a variable resistor.
